Welsh Cakes

3 cups flour (gluten free)

2 teaspoons baking powder

1 cup brown sugar

pinch of salt

½ teaspoon nutmeg

1 cup butter

1 cup currents

1 cup milk or enough to make stiff dough

Make a stiff dough with all ingredients. Roll out 1.5cm thickness and cut with cookie cutter. On no stick griddle or buttered pan cook until brown on both sides.

Most likely one of the inspirations for Lembas bread in Lord of the Rings. I once used chopped dates as currents were unavailable. Original recipe calls for lard but shortening could be used.

If multiple Stephens are around double or triple the batch.
